Every summer, I get a little sentimental thinking about all of the amazing times Mr. Jones and I have shared with family and friends at BBQ's and family gatherings. We don't get to visit our loved ones back in Kentucky that often, but that isn't going to stop us from having some festive feasts with friends here in Seattle! I love a good summer BBQ and in honor of Father's Day this weekend, I wanted to share some of my dad's favorite entertaining tricks with you!
My dad was the king of summer BBQ's and hosting parties. He loved a good theme and usually went with tropical during the summer months, because who doesn't love a festive lei and fiery tiki torches?! Other than buying out the dollar bin decor, there were two other things his parties never lacked: iced tea and pineapple salsa! My dad loved Lipton Iced Tea so much that when I went off to college, he insisted that I have an iced tea brewing machine in my dorm room. Seriously, this man wanted me to be prepared and how was I to focus on studying without a delicious glass of chilled tea?!
After my dad passed away 6 years ago, little things like iced tea and pineapple salsa have become really special to me, especially when entertaining. They remind me so much of him and how happy he was when our backyard was full of friends and family, dining on whatever he had grilled on his prized Green Egg. As you can imagine, I was overjoyed when I was presented with the opportunity to partner with Lipton to share a fun way to give your summer BBQs a tasty boost!
Iced tea at our house was always lightly sweetened and never served without slices of juicy lemons. My dad had truly perfected his recipe , so when I needed to come up with one of my own the pressure was on! I'll be honest, I'm not the best at recipes because I grew up watching my mom create delicious meals without one (still don't know how she does it!). So, I decided to go with something that looked cute since my dad also taught me the importance of presentation.
Luckily, my solution produced what I would consider the perfect drink- lightly sweetened with hints of fresh lemon and delightfully refreshing. Hooray! The best part is that you just follow the directions on the back of the Lipton tea box, pour the chilled tea into a glass, and add a lemon juice popsicle- BAM! Your summer BBQ plans just got a lot more exciting, didn't they?!

JEFF MAYNARD'S FRESH PINEAPPLE SALSA
- 1 Fresh Pineapple
- Fresh Salsa (or homemade!)
- 1 bag of Tortilla Chips
- Optional: cocktail shrimp
- Cut pineapple in half.
- Using a knife, carve out the inside of the half you will use to put the salsa in.
- Chop the other half into small pieces to mix in with fresh salsa.
- Mix fresh salsa with approximately 1/2 cup of fresh pineapple. Use more or less depending on how large the pineapple "boat" is.
- Pour pineapple salsa into the pineapple "boat" and garnish with lime.
ME & MR. JONES BBQ PULLED CHICKEN TACOS
- 2 lbs. chicken breast
- Small taco shells (flour or corn)
- Fresh Pico De Gayo
- Feta Cheese
- Taco Seasoning
- Sweet Baby Ray's BBQ Sauce
- To prepare chicken:
- Sprinkle taco seasoning on both sides of all chicken breasts.
- Place chicken breasts into a Ziploc bag and pour enough BBQ sauce to cover chicken in the bag.
- Refrigerate for 30 min-1 hour.
- Bake chicken in a Pyrex baking dish for 30min at 300 degrees.
- After baking chicken, use two forks to shred chicken breasts.
- Add chicken and garnishes of your choice to the taco shell!
